A warm cup of broth

Bò sets in the fridge and turns liquid again as it warms. Start with a small amount of water, then adjust the strength to your taste.

About 5 minutes · Servings: 1

Ingredients

  • 150 ml Bò broth
  • 100 ml water, plus more to taste

Method

  1. Spoon the chilled broth into a small saucepan and add the water. Warm over a low heat, stirring occasionally as the gel melts.
  2. When the broth is hot and steaming, taste it. Add a little more hot water if you prefer a lighter cup; use less water next time for a fuller flavour. There is no need to boil it vigorously.
  3. Pour into a cup and drink while comfortably warm. Taste before adding seasoning: the regular broth already contains hand-harvested Algarve sea salt.
